Mexican Cooking Classes at Casa Colores with Donna Jones

For the 9th of November 2013 we made arrangements ahead of time to learn to cook Mexican Style with Donna Jones. The cost was US $ 50.00 per person including lunch, and scheduled from 10am to 2pm for a class up to 8 people. That was a fantastic deal.

We met Donna at the Sendero Mall in Cabo San Lucas. She collected the other 3 couples and we drove to her home just outside Cabo in the country overlooking the bay. Donna grew up in Arizona, but lives in Mexico for the last 35 years.

The upper floor of her house is set up for the cooking classes. We were a nice group, two couples  from Vancouver, and one from Australia. Everybody got along great. We could help ourselves to water, Jamaica Juice and Tequila.

Donna gave us a brief history of the Mexican Cuisine. She really loves Oxacan food ( Oxaca is a southern state on the mainland of Mexico). Her boyfriend is from there.

This was a very hands on class. We roasted peppers, grounded spices, mashed garlic, and tasted everything.

We came to the conclusion that Mexican cooking is very time consuming. It took us all day to make a Mole and a Pipian Sauce. But the delicious lunch we had was amazing. We cooked and tasted all afternoon. 

Lunch: Chiles Rellenos Stuffed with Menonita Chihuahua Cheese
My favorite Guacamole recipe:  
Mash one garlic clove with a teaspoon of sea salt. Mash a perfect ripe Avocado with a potato masher, mix with the garlic and salt. That's it. Serve with warmed up Corn Chips.

By the time we left Donna it was 4:30 pm. We had a wonderful day.
